ECOMAYO was created with the desire to make a "delicious" plant-based mayonnaise. We used algae instead of eggs to reproduce the flavor of eggs, while adding the freshness of apple cider vinegar for a refreshing taste.

The bright, dark green color is the perfect dish to add a new color to your meals.

Wish there was. The ideal mayonnaise that is healthy and environmentally friendly.

Mayonnaise has many fans because it can be incorporated into a variety of menus, but many people avoid it because it is not healthy. If there was a mayonnaise that was healthy, nutritious, plant-based, and on top of that environmentally friendly, it would please a lot of people. And among algae, I would like to make a healthy mayonnaise using spirulina, which is so rich in nutrients that it is called the "king of superfoods. The development project started from such a desire of the members involved in the production and sales of the only raw spirulina in Japan.

I want to eat mayonnaise, but I am inevitably put off by its health concerns. Is there any mayonnaise that is healthy and safe to eat? I usually choose safe and healthy ingredients, so I want to be particular about seasonings as well.

Spirulina is one of the wonderful algae that "makes both people and the earth healthy" because it contains abundant nutrients and its cultivation method is very earth-friendly. There are many people waiting for plant-based mayonnaise using such spirulina, not only in Japan but also overseas.

Color and Taste Barriers. Overcoming them to create "ECOMAYO"

During the prototype stage, we ran into a wall of unstable color. Even under the same conditions, the vivid blue color would sometimes appear and sometimes fade. Color is an important element in food products, and we really wanted to express the beautiful blue color of spirulina. However, when we prioritized color, the unique taste of spirulina came out. After repeated trial and error, we finally succeeded in creating a product that we were satisfied with. The mayonnaise, which had been affectionately called "algae mayonnaise" during the prototype stage, was given an official name and design, and thus was born "ECOMAYO," a delicious mayonnaise made from algae.

We are repeating test production, but we are struggling with the color. In the company's kitchen, we get a beautiful azure color, but in the factory, it turns brown.

After extensive internal and external interviews, the product name was decided on as "Tasty Tasteful Yo Eco-Mayo made from Algae. Actually, we are particular about the "yo" in "Tasty yo. We hope it will be familiar to everyone.

Why is ECOMAYO green?

The beautiful green color of ECOMAYO is a natural color derived from spirulina, the "king of superfoods. Spirulina contains the unique blue pigment phycocyanin, as well as green chlorophyll and yellow beta-carotene pigments. Phycocyanin is known to enhance the skin barrier function and has strong antioxidant properties.

How many calories are in ECOMAYO?

Each tablespoon (12g) of ECOMAYO contains ~57kcal. ECOMAYO is 28% less calories than regular mayonnaise.

What is the salt content of ECOMAYO?

The salt equivalent per tablespoon (12 g) of eco mayo is 0.3 g. A "pinch of salt" is said to be around 0.5 g, but this is less. A "pinch of salt" is said to be about 0.5 g, but this is less than that.

Are eggs used as raw materials?

ECOMAYO does not contain eggs. Instead of eggs, spirulina, known as "the green vegetable in water" and "the king of superfoods," is used.

Is wheat used as a raw material?

ECOMAYO is wheat-free.

Where is the expiration date for ECOMAYO?

The expiration date for ECOMAYO can be found at the bottom of the label, under the place of manufacture.

Can I eat it even though the expiration date has expired?

How do you store ECOMAYO?

Store in a cool place out of direct sunlight. After opening, store in a refrigerator (2-10℃) and consume as soon as possible. Please note that the product may be separate if stored at temperatures below 0°C (32°F) .

Is it safe to cook ECOMAYO?

Ecomayo can be cooked and eaten, but the color and flavor may change. Ecomayo does not contain synthetic coloring agents, and the color of Ecomayo is due to the natural blue phycocyanin pigment contained in spirulina, so the color may change due to heat.
